Our Food Philosophy
Melbourne born Chris Connors joined the Restaurant Merlot team in 2004, after a decade cooking in various Melbourne and Queensland restaurants. His passion for regionally inspired farm house cuisine brought him to North East Victoria where he has played an integral role in creating Restaurant Merlot's overarching food philosophy which is to use the freshest, seasonal produce to create uncomplicated dishes with simple well integrated flavours. Chris believes in always going regional, if you believe it to be good enough, and he does.
Chris creates a menu that flows through the seasons, making the most significant alterations for summer and winter, inspired by his blessed regions artisan producers and growers. Chris's passion for finding small emerging producers has helped create an eclectic mix of local suppliers in his own back yard, so he never has to look too far for inspiration.
